Above 95°F, most vegetables stop setting fruit no matter how much you water — tomato pollen goes sterile, beans drop blossoms, lettuce turns bitter and bolts. Desert and heat-wave gardening is about working around biology, not fighting it.
Flip the calendar: In low-desert climates (Phoenix, Tucson, Las Vegas), summer is your 'winter' — the season you endure, not the season you plant. The productive windows are February–May and September–November. Fall gardens in the desert routinely outperform spring ones because plants mature into cooling weather instead of intensifying heat.
Shade cloth is not cheating: 30–50% shade cloth over summer crops drops leaf temperature 10°F+ and can be the difference between harvest and collapse. Peppers and tomatoes actually prefer afternoon shade once temperatures pass 95°F. Rig it on the west side or overhead on simple hoops; remove it when highs drop below 90°F.
Water deeper, not more often: Shallow daily sprinkles in extreme heat evaporate before they matter and grow surface roots that cook. Water deeply before sunrise (soaker hose or drip, 30–45 minutes) so moisture is banked where roots actually live. Ollas — unglazed clay pots buried and filled with water — are an ancient desert trick that meters water directly to roots for days.
Choose heat fighters: Some crops genuinely thrive at 100°F+: okra, black-eyed peas, tepary beans, Armenian cucumbers, sweet potatoes, basil, and peppers (with afternoon shade). Growing heat-adapted varieties beats nursing heat-sensitive ones — look for 'heat-set' tomato varieties bred to set fruit above 90°F.
Protect the soil and yourself: Three inches of mulch minimum (bare desert soil hits 140°F+). Harvest at dawn — produce picked at 110°F is already half-cooked and wilts in minutes. And the gardener wilts too: shade, water, and morning hours apply to you as much as the plants.
Quick wins: If a heat wave is forecast, deep-water the evening before, then don't panic-water at noon — wilted leaves at 3pm often recover by evening. Check soil moisture before adding more; heat wilt and drought wilt look identical but only one wants water.
